Khandvi (Gram flour rolls)

Happy new year folks!!

I like to keep things easy and simple, in my life and in my kitchen. So today I made a very simple Gujarati appetizer, khandvi. Its made using besan (gram flour) and yogurt, 2 very simple ingredients and it takes less than 15 minutes to prepare. If you are hosting a party this is an “easy to make” finger food. You can alter the spice levels based on your taste requirements. Ginger and green chilli gives it a nice kick. Give it a shot and you won’t be disappointed.

Here is the recipe for simple home made khandvi:

Ingredients

1 cup besan (gram flour)
1 cup yogurt

1 ½ cups water

1/4 tsp tumeric

2 tsp ginger-green chilli paste
salt to taste

Tempering or tadka:

2 tsp cooking oil
1tsp mustard seeds
curry leaves

Garnish: Finely chopped coriander

1.Mix bengal gram flour with yogurt and water.

2.Add  2 tsp of ginger-chilli paste, ¼ tsp tumeric and salt

3.Mix well to make a smooth batter and make sure there are no lumps.

4.Cook the batter over medium high flame and keep stirring continuously until it becomes a nice thick paste. It should take about 5-7 minutes.  (When the batter is cooked it will not stick to the walls of the pan)

5.Once cooked take the mixture off the stove and spread the mixture evenly on  a non greasy surface  into a thin sheet and let it cool. ( I used the back side of a baking tray and it worked perfectly)

6.Make sure you do this very quickly because at this stage the mixture solidifies rapidly.

7.Now cut the sheet into long even stripes and roll each stripe.

8.Temper it with mustard and curry leaves. Add chopped coriander leaves.

    at first look looks so complicated to make…but wow..what a simple recipe..yet appears to the guest like you’ve spent all day in the kitchen…which is what makes indian guests happy!
