Beetroot and Peas Pulao

Since it’s the festival of colors this weekend, I wanted to prepare a dish that reflected the mood and incorporated a lot of colors.I was at my friend’s place yesterday afternoon and her mom had made a very colorful pulao (rice) with beets,carrots and peas.The dish was so flavorful with vibrant colors that I decided to try out her recipe.Here is my version of the beetroot pulao.


Onion- 1 large

Beetroot- 2-3 (medium size)

Peas – 1 can ( 250 g)

Mint leaves – 4-5

Green chillies – 2-3

Basmati rice – 1 and a half cup

Whole garam masala:

Cumin seeds- 1tsp

Cinnamon sticks – 1 inch

Cloves- 3-4

Cardamom – 3-4

Bay leaf – 1

Ghee- 2 tsp

1.Make thin slices of onion and chop the beets into tiny cubes.

2.In a pan add 2 tsp ghee and saute whole garam masala ( cumin,cinnamon,cloves,cardamom and bay leaf)

3.Add onion and sauté till it turns translucent.

4.Now add the chopped beetroot, peas and green chillies and cook for about  7-8 minutes.

5.Add one and a half cup rice and give it a quick mix and transfer the contents to a rice cooker.

5.Add 3 cups of water (rice to water ratio is 1:2), throw in the mint leaves and cook the rice.( I use an electric cooker)

(Try not to pressure cook it because the rice gets really mushy)
