As a child, I hated squash but did not know the reason. May be it was the taste or the smell or the texture. So in order to make me eat a lot of vegetables my mom used to mash it up well, add salt and pepper. Then all of a sudden it tasted delicious .Even today I follow the same strategy in my cooking. I make pureed vegetables and either add them to any gravy or just make soup.This way the texture is masked yet the yumminess remains.Here is a very easy way to make delicious butternut squash soup.
Butternut squash – 1 medium size ( around 1.5 pounds)
Onion – 1 large (chopped)
Garlic – 3 pods
Vegetable broth- 4 cups
Butter – 2 tsps
Nutmeg – 1/4 tsp
Salt and pepper to taste
1.In a stock pot melt 2 tsps of butter and sauté chopped onion and garlic until it turns translucent.( 5-7 minutes in medium flame)
2. Now add cubes of squash (peeled and seeded and cut into cubes) and 4 cups of vegetable stock and boil for about 15 minutes.
3.Once squash gets cooked well puree all the contents in a blender.
4.Add the blended squash back to the pot and add half cup cream and stir it for a few minutes..
5.Add salt and pepper and nutmeg.Garnish with chives.
