Stir-frying is a technique that involves frying vegetables/meat very quickly, while stirring continuously. This dish requires very little preparation and cooking time. For this recipe, you will need 1. Your choice of vegetables or tofu (or meat) 2. Stir-fry sauce. All you need to do is to quickly sauté the vegetables in a pan with very little oil under high flame. I learnt this recipe from my aunt who makes a number of different versions. You can change the amounts of the ingredients based on your taste preference.
Serving size: 4
1.Tofu- 1 pack (450 gm) (Use extra firm tofu that does not disintegrate quickly)
2.Onion- 1 large (I use white ones because they are less pungent compared to the purple ones)
3.Capsicum- 1 large
You can also add carrots, green beans, broccoli, and sweet corn to it.
For the sauce:
1.Soy sauce – 2 tbsp
2.Vinegar- 1 tbsp
3.Tomato ketchup- 1 tbsp
4. Cornstarch – 1 tsp (just used to thicken the sauce)
2.red pepper flakes
3.Spring onion (optional)
To make the sauce:
In a small pan add soy sauce, vinegar, tomato ketchup and little bit of water and boil it for a few minutes. Add cornstarch to thicken the sauce
To make the stir-fry:
1.Finely chop onion into long thin slices and sauté them for about 2 minutes.
2.When the onion is light golden add capsicum (and other optional vegetables) and cook for another 2 to 3 minutes.
3.Then add the tofu (cut them into cubes) and sauté it for another couple of minutes.
4.While the veggies are getting cooked in another pan make the sauce.
5.Add the sauce to the cooked tofu/veggie mixture and sauté it. Add salt and pepper flakes.
6.Garnish it with spring onion and serve it hot.
